Madurai Mutton Chukka Ingredients:
Mutton – ¼ kg
Small onions – 5
Green chilly – 2
Ginger garlic paste – 1 tablespoon
Turmeric powder – ¼ tsp
Curry leaves and coriander leaves
Salt
Sesame oil
For Mutton Masala Powder:
Red chilly – 2
Coriander seeds – ½ tsp
Cumin – ½ tsp
Pepper – 1 tsp
Preparation Method:
- Dry roast all ingredients given for mutton masala powder and blend to a coarse powder in a mixer.
- In a pressure cooker, add mutton, turmeric powder, mutton masala powder, salt and required water and boil.
- After boiling, in a pan, add oil. Fry curry leaves and add onion. Saute till golden brown.
- Then add ginger garlic paste. Saute till raw smell goes.
- Then add boiled mutton with its stock. Add salt if required. Cook till all water evaporates.
- Finally, switch off the flame and garnish with coriander leaves.
