Madurai Mutton Chukka Ingredients:

Mutton – ¼ kg

Small onions – 5

Green chilly – 2

Ginger garlic paste – 1 tablespoon

Turmeric powder – ¼ tsp

Curry leaves and coriander leaves

Salt

Sesame oil

For Mutton Masala Powder:

Red chilly – 2

Coriander seeds – ½ tsp

Cumin – ½ tsp

Pepper – 1 tsp

Preparation Method:

  1. Dry roast all ingredients given for mutton masala powder and blend to a coarse powder in a mixer.
  2. In a pressure cooker, add mutton, turmeric powder, mutton masala powder, salt and required water and boil.
  3. After boiling, in a pan, add oil. Fry curry leaves and add onion. Saute till golden brown.
  4. Then add ginger garlic paste. Saute till raw smell goes.
  5. Then add boiled mutton with its stock. Add salt if required. Cook till all water evaporates.
  6. Finally, switch off the flame and garnish with coriander leaves.
