INGREDIENTS:
Unshelled Prawns 250 gms
Green chilly 1
Onion 1
Tomato 2
Ginger garlic paste 1 tsp
Turmeric powder ¼ tsp
Chilli powder 1 tsp
Mustard seeds ¼ tsp
Curry leaves and coriander leaves
Sesame oil
For Chettinad Masala powder (Dry roast):
Cinnamon 1 inch stick
Star anise 1
Cloves 2
Cardamom 2
Coriander seeds 2 tsp
Pepper corns 1 tsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Method:
- Dry roast all ingredients for chettinad masala powder and blend them to a coarse powder.
- In a pan, add oil. Fry mustard and curry leaves.
- Then saute onion till golden brown and saute ginger garlic paste till raw smell goes.
- Then add tomatoes. Saute them till mushy.
- Then add chilly powder, turmeric powder and ground masala powder.
- Add some water and cook till oil oozes out.
- Add prawns. Do not add water as prawns leave out moisture which is enough for them to be cooked.
- After the water evaporates, switch off the stove and garnish with coriander leaves.
